Marinated Cheese
- ½ c. olive oil
- ½ c. white wine vinegar
- 3 T. parsley
- 3 T. minced green onion
- 1 t. sugar
- 3/4 t. basil
- ½ t. salt
- ½ t. pepper
- 3 cloves garlic, minced
- 1 2-oz. jar diced pimento
Put in a jar; shake; set aside.
- 1 8-oz. block sharp Cheddar cheese
- 1 8-oz. block cream cheese
Cut cheeses in half lengthwise then into 1/4 in. slices. Arrange alternately in a shallow baking dish, standing on edge.
Pour marinade over cheese. Cover and refrigerate at least 8 hours.
Serve with assorted crackers.
