Marinated Cheese

  • ½ c. olive oil
  • ½ c. white wine vinegar
  • 3 T. parsley
  • 3 T. minced green onion
  • 1 t. sugar
  • 3/4 t. basil
  • ½ t. salt
  • ½ t. pepper
  • 3 cloves garlic, minced
  • 1 2-oz. jar diced pimento

Put in a jar; shake; set aside.

  • 1 8-oz. block sharp Cheddar cheese
  • 1 8-oz. block cream cheese

Cut cheeses in half lengthwise then into 1/4 in. slices. Arrange alternately in a shallow baking dish, standing on edge.

Pour marinade over cheese. Cover and refrigerate at least 8 hours.

Serve with assorted crackers.
