Cilantro Lime Rice

  • 1 small onion, diced
  • 2 cloves of garlic, minced
  • 1 cup basmati rice
  • 2 cups chicken broth
  • salt to taste
  • 2 Tbsp lime juice, divided
  • 2 Tbsp cilantro, chopped


Saute onion and garlic in a sauce pan until soft. Stir in rice for one minute then add chicken broth, salt, and 1 Tbsp lime juice. Bring to a boil, then cover and simmer for 20 minutes.

Fluff with a fork, then stir in remaining 1 Tbsp of lime juice and cilantro.
