Chicken Fajitas

  • 2-3 chicken breasts
  • 1 red bell pepper
  • 1 green bell pepper
  • 1 onion
  • 1 tsp each oregano, chili powder, cumin and coriander
  • 1 tsp minced garlic
  • 1/4 cup lemon juice
  • oil for cooking
  • tortillas
  • Your choice of toppings: rice, beans, diced tomatoes, sliced avocados, salsa, guacamole

Cut the chicken and veggies into strips. Combine the spices, garlic and lemon juice in a bowl and mix well. Marinate the chicken and veggies in the refrigerator for about 4 hours. When ready to cook, heat a little oil in a large skillet on medium heat and cook until the chicken is cooked through and the veggies are soft.
