Chicken Fajitas
- 2-3 chicken breasts
- 1 red bell pepper
- 1 green bell pepper
- 1 onion
- 1 tsp each oregano, chili powder, cumin and coriander
- 1 tsp minced garlic
- 1/4 cup lemon juice
- oil for cooking
- tortillas
- Your choice of toppings: rice, beans, diced tomatoes, sliced avocados, salsa, guacamole
Cut the chicken and veggies into strips. Combine the spices, garlic and lemon juice in a bowl and mix well. Marinate the chicken and veggies in the refrigerator for about 4 hours. When ready to cook, heat a little oil in a large skillet on medium heat and cook until the chicken is cooked through and the veggies are soft.
