Apple Crisp

  • 10 c all-purpose apples, peeled, cored and sliced
  • 1 c white sugar
  • 1 T all-purpose flour
  • 1 t ground cinnamon
  • ¾ t ground nutmeg
  • ¼ - ½ c water
  • 2 c quick-cooking oats
  • 2 c all-purpose flour
  • 2 c packed brown sugar
  • 1 c butter, melted
  • ½ t baking powder
  • ½ t baking soda
  • 3–4 T molasses

1.Preheat oven to 350 degrees F (175 degrees C).

2.Place the sliced apples in a 9x13 inch pan. Mix the white sugar, 1 T flour, ground cinnamon and nutmeg together and sprinkle over apples. Pour water over apples and spices.

3.Combine the oats, 2 c flour, brown sugar and melted butter. In a separate bowl, mix together the baking powder, baking soda and molasses. Allow to rise for 3-5 minutes. Add to the oat mixture and mix together thoroughly. Crumble evenly over the apple mixture.

4.Bake at 350 degrees F (175 degrees C) for about 45 minutes.

This can be made without the molasses. However, the reaction between the molasses and baking soda and powder allows the crumb mixture to harden further.
