Mexican Street Corn
Ingredients:
- 1 12 ounce bag frozen corn
- 1/4 cup mayo
- 1/2 teaspoon chili powder
- 1 tablespoon lime juice
- 1 tablespoon cilantro, minced
- 2 tablespoons green onions, minced
- 1/2 cup cotija (or parmesan) cheese, grated
Directions:
Cook the corn as directed on the bag. In a large bowl combine the mayo, chili powder, and lime juice and mix well. Add the corn, cilantro, green onions, and cheese and stir until evenly coated. Serve warm.
