Sausage, Green Beans and Potatoes

  • 2 lbs smoked sausage
  • 8-10 potatoes
  • 4 lbs green beans, frozen


Cut the sausage into 3-inch lengths and brown in a skillet.

Peel the potatoes and cut into large chunks.

In a large crockpot, layer 1/2 of the green beans, lightly salt and pepper, then 1/2 of potatoes, lightly salt and pepper, then 1/2 of the sausage. Repeat in the same way with the rest of the green beans, potatoes, and sausage.

Cook on high for 8-10 hours. Two or three times during that time, lightly stir the contents and taste to check the amount of salt and pepper. Dinner is done when the beans turn dark green and the potatoes turn light brown.

Serve with corn and biscuits.
