Hummus
- 2 cans chickpeas, drained and rinsed
- 4 tablespoons olive oil, divided
- 1/2-3/4 cup water
- 2 tablespoons lemon juice
- 1 teaspoon cumin
- 1/2 teaspoon salt
- 1/2 teaspoon pepper
- 2-3 cloves garlic, minced
Put one can of chickpeas and two tablespoons of olive oil in the food processor and run until the chickpeas are mostly broken down. Add the other can of chickpeas and two more tablespoons of olive oil and continue processing.
Slowing pour the water into the running food processor until the hummus has the consistency you want.
Keep the food processor running while you add the lemon juice, cumin, salt, pepper, and garlic, stopping to scrape down the sides occasionally until everything is well mixed.
