Coconut Pound Cake
Cake:
- 1 cup butter
- 1/2 cup vegetable oil
- 3 cups sugar
- 5 eggs
- 1/2 teaspoon baking powder
- 3 cups flour
- 1 1/4 cups milk
- 1 teaspoon vanilla
- 1-1 1/2 teaspoon coconut extract
- 1 3/4 cups coconut
Glaze:
- ? powdered sugar
- ? milk
- ? vanilla
- ? coconut extract
Cream butter, oil and sugar. Add eggs one at a time. Beat well. Sift baking powder and flour. Add alternately with milk. Stir in vanilla, coconut extract, and coconut. Bake in greased and floured 10" angel food cake pan or 12 cup German bundt cake pan at 325 for 1 hour and 30 minutes or until done. Beat powdered sugar, milk, vanilla, and coconut extract until smooth and pour over cooled cake.
