Fresh Corn Salad

  • 1/4 c vegetable oil
  • 2 T rice vinegar
  • 2 T water
  • 2 T sugar
  • 1/2 tsp salt
  • fresh ground pepper to taste
  • 1 bag Spring Mix greens, torn into small pieces
  • 5 ears fresh corn, cooked, cut off, and cobs scraped
  • 1 yellow tomato, diced
  • 1 red tomato, diced
  • 2 green onions, chopped fine
  • 1/4 c basil leaves, chopped
  • 2 chopped avocados
  • Ricotta salata cheese

Mix the oil, vinegar, water, sugar, salt, and pepper in a measuring cup and allow to stand for 30 minutes.

In a large bowl, stir 3/4 of the dressing into the greens. Add the corn, tomatoes, onions, basil, and the rest of the dressing, then stir. Top with avocado and cheese.
