- 1/4 c vegetable oil
- 2 T rice vinegar
- 2 T water
- 2 T sugar
- 1/2 tsp salt
- fresh ground pepper to taste
- 1 bag Spring Mix greens, torn into small pieces
- 5 ears fresh corn, cooked, cut off, and cobs scraped
- 1 yellow tomato, diced
- 1 red tomato, diced
- 2 green onions, chopped fine
- 1/4 c basil leaves, chopped
- 2 chopped avocados
- Ricotta salata cheese
Mix the oil, vinegar, water, sugar, salt, and pepper in a measuring cup and allow to stand for 30 minutes.
In a large bowl, stir 3/4 of the dressing into the greens. Add the corn, tomatoes, onions, basil, and the rest of the dressing, then stir. Top with avocado and cheese.
