Preheat oven to 425°F.
Mix well:
- 2 1/4 cups oat bran
- 3/4 cups brown sugar
- 1 teaspoon baking powder
- 1/4teaspoon salt
Mix well separately:
- 1 cup skim milk
- 1/2 cup egg whites or egg beaters (takes 3 eggs)
- 1 tablespoon olive oil
- 3/4 cups chocolate chips
Now mix wet ingredients into the dry ingredients, mix well, and pour into the pan. (The batter will be very wet.) Sprinkle some more chocolate chips on top.
Bake for 15-20 minutes or till done — a toothpick comes out dry.
Variations:
Add 5 tablespoons of cocoa powder to the dry ingredients to make them double-chocolate muffins.
OR
Add 2 teaspoons cinnamon and 1 teaspoon nutmeg to the dry ingredients—it makes them taste like oatmeal-chocolate chip cookies.
