Bread

- 1 1/2 teaspoons baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon cinnamon
- 1/4 teaspoon salt
- 1/4 teaspoon nutmeg
- 1/8 teaspoon ginger
- 2 eggs, lightly beaten
- 1 cup mashed ripe bananas
- 1 cup sugar
- 1/2 cup melted butter
- 3/4 cup fresh or frozen blueberries (or strawberries)
- 1/2 cup shredded sweetened coconut
Streusel Topping
- 3 tablespoons packed brown sugar
- 2 tablespoons all-purpose flour
- 2 tablespoons butter, cut into pieces
- 1/2 cup shredded sweetened coconut
- 1/4 cup fresh or frozen blueberries
Preheat the oven to 350ºF. Spray a 9x5-inch loaf pan with nonstick cooking spray.
