- 1 cup uncooked quinoa
- 2 eggs, lightly beaten
- 8 ounces deli ham, finely chopped (about 1 1/2 cups)
- 1-2 cups finely chopped steamed broccoli
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 cup finely shredded Parmesan cheese
- 2 cups shredded sharp cheddar cheese
Preheat the oven to 350 degrees F.
Bring the water or broth to a boil then add the quinoa. Cover and reduce heat to a simmer. Allow to cook undisturbed for 15 minutes or until the liquid has been absorbed.
In a large bowl, stir together the cooked quinoa, eggs, ham, broccoli, salt and pepper until combined.
Stir in the parmesan and 1 1/2 cups of the cheddar until well distributed.
Spread the mixture into a 13x9 casserole dish and sprinkle the top with the remaining cheddar.
Bake for 40 minutes or until golden on top.
Serve warm or at room temperature.
