Chocolate Chip Banana Bread
Ingredients:
- 5 T Butter
- 1/2 c sugar
- 1/2 c packed brown sugar
- 1 large egg
- 2 egg whites (1/4 c)
- 1 t vanilla extract
- 1-1/2 c mashed, very ripe bananas (about 3-4)
- 1-3/4 c flour
- 1 t baking soda
- 1/2 t salt
- 1/4 t baking powder
- 1/2 c heavy cream
- 1/3 - 1/2 c mini chocolate chips
- 1/2 c chopped walnuts (optional)
Instructions:
Beat butter until light and fluffy. Add granulated and brown sugars; beat well. Add egg, egg whites, and vanilla, blending until smooth. Add in the mashed bananas.
In a separate bowl, mix flour, baking soda, salt, and baking powder. Add flour mixture alternately with cream to the banana batter, starting and finishing with flour mixture.
Mix in chocolate chips and walnuts.
Grease bottom-only of one loaf pan. Pour batter into pan.
Bake: 350 degrees F. for 1 hour 15 minutes. (Toothpick test) Cool on wire rack 10 minutes, then turn out and cool.
Important Info: Yields only one loaf, so double if you want two loaves.
Variations: Can also be baked in mini-loaf pans or as muffins. Adjust baking time.
