*1/4 c vegetable oil
*2 T rice vinegar
*2 T water
*2 T sugar
*1/2 tsp salt
*fresh ground pepper to taste
*1 bag Spring Mix greens, torn into small pieces
*5 ears fresh corn, cooked, cut off, and cobs scraped
*1 yellow tomato, diced
*1 red tomato, diced
*2 green onions, chopped fine
*1/4 c basil leaves, chopped
*2 chopped avocados
*Ricotta salata cheese


Mix the oil, vinegar, water, sugar, salt, and pepper in a measuring cup and allow to stand for 30 minutes.

In a large bowl, stir 3/4 of the dressing into the greens. Add the corn, tomatoes, onions, basil, and the rest of the dressing, then stir. Top with avocado and cheese.
