*3 large croissants, cut up (about 5 to 5 1/2 cups)
*1 cup fresh or frozen blueberries
*1 package (8 oz.) cream cheese, softened
*2/3 cup sugar
*2 eggs
*1 teaspoon vanilla
*1 cup milk

Preheat oven to 350 degrees.
Place croissant pieces in a 9 inch square pan. Sprinkle with blueberries.
Beat cream cheese, sugar, eggs and vanilla in medium bowl with electric mixer until well blended. Gradually add milk, beating well after each addition. Pour evenly over croissant pieces. Let stand 20 minutes.
Bake at 350°F for 35 to 40 minutes or until set in center and golden brown. You may want to cover it with foil for the last 10 minutes if the tops are getting too browned.
Serve warm sprinkled with powdered sugar.

Variation: Instead of baking in a square pan bake individually. Place croissant pieces evenly in 10 (1/2-cup) ramekins; sprinkle with blueberries and pour cream cheese mixture evenly over croissant pieces. Let stand 20 minutes. Bake at 350°F for 20 to 25 minutes or until set in center and golden brown.

*12.8oz (364g) 110 degree water
*4 tsp (18g) fine sea salt
*20g fresh yeast (or 9.2g active dried yeast, or 7g instant dried yeast) *amend yeast quantities depending on proving time.
*21.4oz (607g) “00” flour, plus extra for dusting

Whisk the salt and yeast into the warm water.

If mixing by hand: Place the flour in a large bowl and pour the yeast mixture into it. Stir with a wooden spoon until a dough starts to form. Continue mixing by hand until the pizza dough comes together in a ball. Turn it onto a lightly floured surface and knead with both hands for about 10 minutes, until it is firm and stretchy. Return the dough to the bowl. Cover with cling film and leave to rise in a warm place for about 2 hours or until doubled in size.

If using a mixer: Fit the mixer with the dough hook and place the flour in the mixer bowl. Turn the machine on at a low speed and gradually add the yeast mixture to the flour. Once combined, leave the dough to keep mixing to at the same speed for 5-10 minutes, or until the dough is firm and stretchy. Cover the dough with cling film and leave to rise in a warm place for about 2 hours or until doubled in size.

When the dough has roughly doubled in size, divide it into 3 or 4 equal pieces, depending on what size you want your pizzas to be (either 12 inches or 16 inches wide). Place each piece of dough in a separate bowl or tray, cover with cling film and leave to rise for another 30 - 60 minutes, or until doubled in size.Note: It’s also possible to cold-prove your pizza dough, a technique that allows the yeast to work on the sugars in the flour for longer, thus helping the dough to develop a deeper flavour. To do this, use half the amount of yeast listed in the ingredients, and leave the dough to rise in the fridge for 24-72 hours – basically, until the day you need it. Divide the dough and cover it as described in the main recipe, then set aside (not in the fridge) for at least 5 hours, until it is up to room temperature.

Kneading and stretching the dough: Our top tip is always to start with a perfectly rounded ball of pizza dough as this helps to keep the shape of the pizza base circular during the stretching process. Place the ball on a lightly floured surface, flour your hands and use your fingertips to press the dough into a small, flat disc. Working from the center, push the dough outwards while spreading your fingers, making the disc slightly bigger. Pick up the pizza dough and gently pinch it all around the edge, allowing gravity to pull it downwards into a 12-inch (30cm) circle. Neapolitan-style pizza bases are very thin, so you should be able to see through the base when you hold it up to the light. Take care when doing this – you don’t want it to tear.

Once the pizza dough is fully stretched, lightly flour your pizza peel and lay the base on it. If at this point you see any small holes in the dough, gently pinch them back together. Once you’re happy with the base, add your toppings and bake in your Ooni pizza oven as indicated in your chosen recipe.

INGREDIENTS

*1 bunch Tuscan kale (for ex: black or lacinato)''Regular kale works fine''
*2 thin slices country bread, or two handfuls good, homemade coarse breadcrumbs
*1/2 garlic clove
*1/4 teaspoon kosher salt, plus a pinch
*1/4 cup (or small handful) grated pecorino cheese, plus adiitional for garnish
*3 tablespoons extra-virgin olive oil, plus additional for garnish
*Freshly squeezed juice of one lemon (scant 1/4 cup or ~50ml)
*1/8 teaspoon red pepper flakes
*Freshly ground black pepper to taste

DIRECTIONS

Trim the bottom few inches off the kale stems and discard. Slice the kale into 3/4-inch ribbons. You should have 4 to 5 cups. Place the kale in a large bowl.

If using the bread, toast it until golden brown on both sides and dry throughout. Tear into small pieces and pulse in a food processor until the mixture forms coarse crumbs, or crumbs to your liking.

Using a mortar and pestle or a knife, pound or mince the garlic and 1/4 teaspoon of salt into a paste. Transfer the garlic to a small bowl. Add 1/4 cup cheese, 3 tablespoons oil, lemon juice, pinch of salt, pepper flakes, and black pepper and whisk to combine. Pour the dressing over the kale and toss very well (the dressing will be thick and need lots of tossing to coat the leaves).. Let the salad sit for 5 minutes, then serve topped with the bread crumbs, additional cheese, and a drizzle of oil.
Combine vinegar, oil, brown sugar, garlic, Bragg Liquid Aminos or soy sauce, and red pepper flakes in a saute pan. (I use a bit less red pepper flakes than called for) Simmer the mixture over moderate heat for 3 minutes, stirring frequently. Remove the pan from the heat and immediately pour the hot mixture over the kale; mix well to thoroughly coat all of the leaves with the dressing. Allow the kale to sit for 10 minutes or more before serving.
Bragg Liquid Aminos is a liquid form of vegetable protein made from soy beans and purified water. It provides 16 essential amino acids and is produced without additional salt or preservatives. You can find it at Whole Foods.
*1/4 cup sugar
*1/2 cup homemade or store-bought raspberry jam

Preheat the oven to 350 degrees. Mix flour, sugar, and butter with a pastry cutter or in a food processor to make a crumbly mixture. Reserve 1 cup of the crumbs for topping.

Combine remaining crumbs with baking powder, baking soda, salt, sour cream, and 1 egg. Mix until mostly smooth. Spread in the bottom of a lightly greased 9×13 baking pan.
Beat softened cream cheese, 1/4 cup sugar and 1 egg until smooth. Pour over the batter in the pan and spread in an even layer. Spoon the jam over the cream cheese layer and swirl with a knife to make a marbled effect. Sprinkle reserved crumbs on top.
Bake for 45-55 minutes until a knife inserted comes out clean.

Bread:
* 1 cup whole milk
* 1/2 cup white sugar
* 1/2 cup butter
* 2-pkg active yeast dissolved in 1/4 cup warm water
* About 4 cups all purpose flour
* 1 large egg
* 1/2 teaspoon salt
* 1 teaspoon ground cardamom

Filling:
* 2 Tbsp melted butter
* 1/4 cup brown sugar, packed
* 1 Tbsp white sugar
* 2 teaspoons cinnamon
* 1 cup golden raisins (optional)
* 1/2 cup slivered almonds (optional)
* 1/4 cup almond paste (optional)

Egg glaze:
* 2 egg yolks
* 2 Tbsp cream

Sugar glaze:
* 1 cup powdered sugar
* 1 Tbsp water

1) Put milk into a small saucepan and heat on medium heat until steamy (but not boiling). Remove from heat. Stir in the butter and sugar until the butter has melted and the sugar dissolved. Pour into a mixing bowl. Mix in yeast mixture and egg.

2) Mix in salt and cardamom. Slowly add in 2 cups of the flour. After the first two cups of flour gradually add more flour until a soft dough starts to form a ball and pull away from the sides of the bowl.

3) Turn out onto a floured surface and knead dough for 7 to 10 minutes until smooth, OR use a dough hook in a stand-up mixer and knead the dough that way for 7 to 10 minutes, adding more flour as needed to keep the dough from being too sticky. Note that the dough should remain soft, so take care not to add too much flour.

4) Place the dough in an oiled bowl, covered with a clean tea-towel or with plastic wrap. Let rise for an hour or until the dough has doubled in size.

At this point you can make a simple braided bread if you want (2 loaves), by punching the dough down, dividing the dough in half, and then dividing each half into three equal parts, rolling the dough pieces into ropes, braiding them, and tucking the ends under. (Skip down to step 8 for baking instructions.) Or you can get more fancy by adding a filling and forming the dough into a wreath shape. The following directions are for the wreath form.

5) Press the dough down to deflate it a bit. Divide the dough into 2 equal parts. Take one part (saving the other for wreath number 2) and use your fingers to spread it into a 8-inch by 16-inch rectangle on a lightly floured, clean, flat surface. If you are having difficulty getting the dough to keep its shape, just do what you can and let it sit for 5 minutes before trying again. Like pizza dough, the dough needs time to relax while you are forming it. Brush the dough with melted butter, leaving at least a half inch border on the edges so the dough will stick together when rolled. Mix together the brown and white sugar and the cinnamon and sprinkle the dough with half of the mixture (saving the other half for the second batch of dough). Sprinkle on more fillings, as you like, such as raisins, slivered almonds, or almond paste. You could even sprinkle on some cream cheese for a creamier filling.

6) Carefully roll the dough up lengthwise, with the seam on the bottom. Carefully transfer to a greased baking sheet. Form a circle with the dough on the baking sheet, connecting the ends together.

7) Using scissors, cut most of the way through the dough, cutting on a slant. Work your way around the dough circle. After each cut, pull out the dough segment either to the right or to the left, alternating as you go around the circle. The dough circle will look like a wreath when you are done.

Repeat steps 5, 6, and 7 with the rest of the dough, to form a second wreath.

8) Cover lightly with plastic wrap and set in a warm area for a second rise. Let rise for about 40 minutes to an hour; the dough should again puff up in size.

9) Preheat the oven to 350°F. Whisk together the egg yolks and cream. Use a pastry brush to brush over the dough. Bake in the oven for 25-30 minutes. After the first 15 minutes of baking, if the top is getting well browned, tent with some aluminum foil.

10) Remove from oven and let cool completely. Whisk together powdered sugar and water to create a final glaze (optional). Add more water if the glaze is too thick to drizzle, add more powdered sugar if the glaze is too runny. Drizzle the glaze in a back and forth motion over the pastry.

Makes 2 wreaths.
Pop-Ups
*1.5 c. pumpkin puree
*3/4 c. white sugar
*1/4 c. raw sugar
*2 c. flour
*1/2 c. butter or margarine
*pinch of salt
*1 t. baking soda
*1 t. baking powder
*1 t. cinnamon
*1/2 t. freshly ground nutmeg
*1 t. vanilla extract
*1 c. butterscotch bits
*20 no-wax 3 oz. paper cups

Icing
*1/2 c. packed brown sugar
*3 T. butter
*1 T. milk
*1 c. confectioners’ sugar
*1 t. vanilla extract

Preheat oven to 375 F. Place paper cups out on a baking sheet and lightly spray with non-stick spray. Leave a little space between each cup to ensure even baking.

Cream together butter and sugar in a large mixing bowl. Add the pumpkin and vanilla. Beat until well combined. Sift together flour, salt, baking soda, baking powder, cinnamon and nutmeg. Slowly add dry ingredients to wet ones just until dry ingredients are moistened. Using a large knife, roughly chop the butterscotch bits and add to the mixing bowl and add to batter. Stir just until incorporated.

Fill each prepared cup a little bit more than half way with batter. Use a small spatula or spoon to push batter down into the bottom of the cups. Bake for 10 to 14 minutes until tops are slightly coloring and a skewer inserted into the center comes out clean. Do not over bake as these pop-ups are meant to be very moist. If some appear to be done before others, remove the ones that are ready and continue to bake the rest.

To prepare icing, combine all ingredients in a small saucepan over low heat. Stir as the mixture melts, being careful to get out any lumps. You can prepare this icing ahead of time, but you’ll need to melt it again just before applying to the pop-ups. On COOL pop-ups, drizzle a spoonful of icing over the top. Allow icing to cool and set up. Once icing is set, store in an airtight container.

Serve in the paper cups or, if you prefer a fancier presentation, remove each pop-up from its cup by gently tearing the paper away from it. Then plate pop-ups individually and serve with an extra drizzle of brown sugar icing.

(makes about 20 pop-ups)

*1/2 cup raisins
*1/2 cup dark rum
*1 1/2 cup mashed overripe bananas, from 3 or 4 bananas
*1/3 cup salted butter, melted
*3/4 cup raw or turbinado sugar
*1 large egg, beaten
*1 teaspoon vanilla extract
*1 tablespoon raisin-infused dark rum (from soaking the raisins)
*1 teaspoon cinnamon
*1/4 teaspoon nutmeg
*1/8 teaspoon allspice
*1 teaspoon baking soda
*1/4 teaspoon salt
*1 1/2 cups all purpose flour
*1/4 cup coconut

Soak the raisins in advance: Combine raisins and rum in a small container with a tight fitting lid. Let stand at room temperature at least overnight before straining and reserving the raisin-infused rum. (You may soak the raisins for much longer but will likely have to add more rum as the raisins absorb it.)

Preheat oven to 350°F.

Grease an 8x4-inch loaf pan generously with cooking spray. You can use butter to grease the pan too, but your loaf may turn out a little darker.

Strain the raisins and reserve the liquid.

In a large mixing bowl, add mashed bananas and stir in melted butter. Mix in the sugar, egg, vanilla, and 1 tablespoon of raisin-infused rum. Add the cinnamon, nutmeg, and allspice. Stir to combine.

Sprinkle the baking soda and salt over the mixture and stir to combine. Mix in the flour until fully combined. (Note that it will be slightly lumpy because of the pieces of mashed banana.)

Lastly, fold in the strained raisins and coconut.

Pour batter into the prepared loaf pan, scraping the bowl to assist. Bake for 50 minutes to 1 hour, or until a tester comes out clean.

Cool on a rack at least 15 minutes before removing the loaf from the pan. Cool completely before slicing and serving.
Mix in chocolate chips and walnuts.
Grease ''bottom-only'' of one loaf pan. Pour batter into pan.

'''Bake:''' 350 degrees F. for 1 hour 15 minutes. (Toothpick test) Cool on wire rack 10 minutes, then turn out and cool.

'''Important Info:''' Yields only one loaf, so double if you want two loaves.

'''Variations:''' Can also be baked in mini-loaf pans or as muffins. Adjust baking time.

'''Warning:''' Disappears FAST! May melt in your mouth and cause extreme lack of self-control. Dad calls it dangerously good! :)

*1/2 cup butter, softened
*2 eggs
*1 cup mashed bananas (about 3 average sized bananas)
*1 3/4 cups flour
*1 teaspoon baking powder
*1/4 teaspoon salt
*1/8 teaspoon baking soda

Grease and flour 1 large loaf pan.

In a large bowl, cream butter and sugar together. Add eggs, bananas, buttermilk and vanilla until the batter is well mixed. Add in the flour, baking powder, salt and soda. Mix until well combined. Pour batter into prepared pan and bake at 350 degrees for 50-55 minutes or until a toothpick comes out clean.
NOTES
Often times, I'll decrease the sugar to 1 cup, increase the bananas to 1 1/2 cups and the bread still turns out extremely moist and delicious!
*1 cup sugar
*1/2 cup melted butter
*3/4 cup fresh or frozen blueberries (or strawberries)
*1/2 cup shredded sweetened coconut

Streusel Topping
*3 tablespoons packed brown sugar
*2 tablespoons all-purpose flour
*2 tablespoons butter, cut into pieces
*1/2 cup shredded sweetened coconut
*1/4 cup fresh or frozen blueberries

Preheat the oven to 350ºF. Spray a 9x5-inch loaf pan with nonstick cooking spray.
In a large bowl, combine 2 cups of the flour, baking powder, baking soda, cinnamon, salt, nutmeg and ginger. In another bowl, combine the eggs, bananas, sugar and melted butter. Stir the wet ingredients into the dry ingredients, just until moistened. Toss the blueberries in the remaining 1 tablespoon of flour. Fold in the blueberries and coconut. Pour into the prepared loaf pan.
To make the streusel, combine the brown sugar and flour. Cut in the butter with a fork or a pastry cutter until it resembles coarse crumbs. Stir in the blueberries and the coconut. Sprinkle on top of the batter.
Bake in the preheated oven until a tester inserted in the middle comes out clean, 60 to 70 minutes. (Cover the top of the bread with foil during the last 15 minutes of baking to prevent over browning, if necessary.) Cool for 10 minutes in the pan then carefully remove to a wire rack to cool completely.

Bake muffins for 18-20 minutes. Makes about 16 muffins.
* 3 cups grated cheese—cheddar and Monterey jack mixed

Process the refried beans in a food processor for a smooth consistency. Spread in the bottom of a 9 x 13 casserole dish. Mix sour cream, mayonnaise, and taco seasoning, and spread evenly over the refried beans.
Peel the avocados. Place in food processor with lemon juice, garlic powder, dash of Tabasco sauce, and salt and pepper to taste. Blend. Spread evenly over the sour cream layer.
Sprinkle chopped olives over the guacamole layer, followed by chopped onions and chopped tomatoes. Top with grated cheese. Refrigerate till ready to serve.
====Note====

This is how the recipe is written, and how I made it. I remember thinking, though, that it seemed too creamy the last few times I made it—almost soupy, and I had planned to try some changes. I was thinking of cutting down the mayonnaise to maybe 1/2 or 1/4 cup, or even eliminate it completely. Also, I thought the lemon juice amount was too much—I think its only purpose is to keep the avocado from turning brown, so you may want to compare some other recipes for guacamole and see what their avocado to lemon juice proportions are.

*1 lb. ground pork sausage
*1 heaping tablespoon taco seasoning
*¼ teaspoon cayenne
*1 14-ounce can black beans, rinsed
*1½ cups fresh salsa
*½ cup water (optional)
*2 tablespoons butter
*3 tablespoons flour
*1¾ cups milk
*1 cup shredded cheese
*fresh cilantro and/or green onions

In a large skillet, brown the sausage until golden brown and crumbled into small pieces. Drain off excess oil. Add the taco seasoning, cayenne, black beans, salsa, and water if it seems like it needs a little more liquid (this will depend on what kind of salsa you use). The consistency should be like a very thick chili.
Melt the butter in a small saucepan over medium high heat. Add the flour and stir to form a paste. Slowly stream the milk in a little bit at a time, whisking a little bit after each addition. The sauce should thicken up gradually - continue to whisk in the liquid in small amounts and simmer until the sauce is thick enough to stick to the back of the spoon. Stir in the cheese until melted. Add the cheese sauce to the chili in the skillet from step one. Mix until well combined - stir in cilantro or green onions to taste.
Transfer to a mini slow cooker or a serving dish. Or just keep it on the stove so it stays warm. This can also be made a day or two in advance - the flavors just keep on getting better.
*3 tsp Chicken Better Than Bouillon
*1-2 can cream of chicken soup
*salt and pepper to taste
*3 c. flour
*2 T. baking powder
*1 1/2 tsp salt
*1 1/2 c. milk
*6 T. canola oil

In a large stockpot, cover a whole chicken with water, and stew, covered (neck, gizzard, and liver removed from cavity) for about 1 to 1 1/4 hours. (Bring to a boil and then turn down the heat to simmer.) Turn once halfway through. Remove the chicken from broth, drain and cool. Pick off all the meat, breaking up large pieces, and set aside.

Strain the broth and de-fat. Heat to a boil then add the bouillon and cream of chicken soup. Whisk until smooth. Salt and pepper to taste. Turn off heat. Add the chicken back into the pot of soup. Heat the soup in the stockpot to boiling when ready to add the dumplings.

To make the dumplings sift together the flour, baking powder, and salt in a large mixing bowl. Add the milk and oil to the dry ingredients and with a mixing spoon, gently but completely blend together.

Into vigorously boiling soup, drop in the dumplings, in roughly 1/4 c. amounts, and not on top of each other, i.e. drop each one into a different part of the pan. It will make about 18 dumplings. Initially the dumplings will sink, and after a minute or two will float as they continue to cook. After all dumplings have been dropped in, cover the pan and steam for about 8-10 minutes. Then partially remove the lid for another couple of minutes. I usually take a fork and pick the top of a dumpling to be sure they are done. Serve immediately.
*2 cans (15 1/2 ounces each) Great Northern Beans, rinsed and drained
*1 3/4 cup chicken broth

In a 4- or 5-quart pot, heat the oil over medium heat. Add the onion and garlic. Cook, stirring occasionally, for 1-2 minutes, until the onion starts to soften.

Add the chicken and cook until the outsides have some color.

Add the beans, broth, chiles, salt, cumin, oregano, pepper and cayenne.

Bring the mixture to a simmer and cook, uncovered, for 15 to 30 minutes.
Remove from the heat; stir in the cream cheese.

Serve immediately. Pairs well with cornbread.

NOTES:
You can also make this with canned or rotisserie chicken, just add it with the beans.
The chopped green chilis can be replaced with a jar of green salsa.
* Large spoonful of cajun seasoning (I didn't measure)

* Teaspoon of dried thyme

* Spoonful of sugar
* 28 oz can of whole tomatoes

* 2 lbs of peeled and deveined shrimp

* Splash of vinegar

Fry sausage in oil on medium high heat. Remove pan from heat and set sausage aside. Lower heat to medium low and stir in flour. Watch and stir until it is a nice rich brown. This can take 20-40 minutes. Meanwhile, put onion, bell pepper, celery, and garlic in food processor. Pulse until small dice. When your roux is correct color (needs to be much darker than peanut butter,) add the chopped veggies. Cook them for a minute or two and add the sausage back. Keep cooking them for 5-10 minutes. Add the better than bouillon and the chicken broth. Stir until the flour is well incorporated. Now and the bay leaves, thyme, sugar, and cajun seasoning. Also add the canned tomato items. Simmer this for 45 minutes or more. Add the chicken. Simmer for 30 minutes. Add the okra and shrimp and a splash of vinegar. Simmer for 45 more minutes. It's finally done. Serve with rice.
*10 Tbsp. chilled unsalted butter, cut into pieces

*4 Tbsp. extra-virgin olive oil, divided
*4 medium yellow onions, thinly sliced
*Kosher salt
*3 garlic cloves, thinly sliced
*2 Tbsp. Dijon mustard
*Pinch of cayenne pepper
*4 oz. coarsely grated sharp cheddar or Gruyère
*½ small butternut squash (a lengthwise half, about 1¼ lb.), seeds removed
*1 delicata squash (about 1 lb.), halved lengthwise, seeds removed
*1 small sweet potato
*1 small red onion
*2 sprigs thyme
*2 Tbsp. unsalted butter
*Flaky sea salt

'''SPECIAL EQUIPMENT'''
An 11"- or 12"-diameter fluted tart pan with removable bottom or a 9"-diameter springform pan

'''Preparation'''

'''CRUST'''
Step 1
Whisk whole wheat flour, salt, and 1 cup all-purpose flour in a large bowl to combine. Add butter and work into dry ingredients with your fingers, smashing between your palms to flatten, until largest pieces are the size of a nickel. Drizzle in 6 Tbsp. ice water and rake in with your fingers. Gently squeeze handfuls of mixture together until a shaggy dough forms. Turn out onto a work surface and knead until only a few dry spots remain. Pat into a disk and wrap in plastic. Chill until very firm, at least 2 hours or up to 3 days.

Step 2
Roll out dough on a lightly floured surface to about ⅛" thick. Transfer to tart pan. Lift up edges and allow dough to slump down into pan. Gently press into corners and trim excess. (If using springform pan, trim dough to 1½" up sides of pan). Freeze until firm, 15–20 minutes, or cover and chill up to 12 hours.

'''FILLING AND ASSEMBLY'''

Step 3
Place a rack in lower third of oven; preheat to 350°. Swirl 2 Tbsp. oil in a large skillet to coat bottom and add yellow onions; season with kosher salt. Set skillet over medium heat and cook onions, stirring occasionally and making sure to scrape bottom of pan, until very soft and deep golden brown, 15–20 minutes. Add garlic and cook, stirring occasionally, until onions are caramelized and deeply browned, 25–30 minutes (if any pieces get super dark and stick to the pan, a few drops of water should dislodge them). Let cool.

Step 4
Brush mustard over chilled dough, then sprinkle with cayenne. Stir cheese into caramelized onion mixture and spread across crust in an even layer.

Step 5
Using a mandoline or very sharp knife, thinly slice both squashes crosswise. Cut sweet potato and red onion in half lengthwise, then thinly slice crosswise with mandoline. Arrange vegetables in concentric circles, with rounded edges facing up, starting from the outside edge, leaning slices against the crust, and working your way inward. Drizzle remaining 2 Tbsp. oil over vegetables and season with kosher salt.

Step 6
Bake tart until edges of vegetables are browned (a few spots may even get deeply browned) and crust is golden brown, 75–90 minutes.

Step 7
Melt thyme and butter in a small saucepan and cook just until butter is bubbling. Brush over tart with a pastry brush and sprinkle with sea salt.
Roll the eggs around in the soy sauce to coat them, and continue rolling them around the pan until the eggs are a dark mohagony color and the soy sauce has been reduced to a thick sludge.

2. Remove the eggs, letting any extra soy sauce drain off, and place on a plate to cool.

3. When the eggs have cooled completely, pack them into lunches or enjoy one as a snack
